Join the University of Alaska Fairbanks Cooperative Extension for a pickling class, Wednesday May 21 from 5:30-9:30 p.m. at Viking Hall.

Move beyond traditional pickling cucumbers and explore the variety of vegetables and fruits that can be pickled and stored. Home fermentation for making sauerkraut will also be covered. Tuition is $25.

Preregistration is required. Online registration is available up until 5 p.m. the day before the class.

Celebrate Norway’s Constitution Day Saturday, May 17 from noon-2 p.m. Meet by the flag pole at I Street between 9th & 10th Avenues. Wear Norwegian sweaters, red & blue ribbons and Norwegian flags as the group walks around the block. Short program precedes parade followed by FREE hot dogs and ice cream. 9:00–11:30: set up tables, chairs, tents, and booth supplies
11:30–2:00 OR 2:00 – 4:00: greet vendors & guests, help booth vendors

Essay contest! What Kids Can Do (WKCD) and Next Generation Press are updating “Hip Deep: Opinion, Essays, and Vision from American Teenagers,” a book of nonfiction essays by youth across the country. They’re inviting youth, ages 13 to 19, to submit nonfiction essays (approximately 500 – 1,000 words) on a topic that you care about deeply. It could also be a speech you gave or an article you wrote (perhaps for your school newspaper)–something that made your friends and your teachers say, “Wow.” Winners will receive a $100 Amazon gift certificate. Join the Chugach Children’s Forest in cleaning up Ship Creek May 17 as a part of Anchorage Creek Cleanup – hosted by Anchorage Waterways Council.

They will be cleaning up trash from the section of Ship Creek behind the Alaska Geographic offices.

They will have a short leadership team meeting starting at 11 a.m., some snacks, and then head down to Ship Creek to clean from noon to 2 p.m.
